This month our chefs ventured out to Killbuck Valley Mushroom Farm, in Burbank, Ohio. Here they foraged for a Midwest seasonal delicacy; ramps. These beautiful green and white wild onions are also sometimes referred to as wild leeks and are also related to the shallot. Ramps are packed with flavor with a strong garlicky punch and have an earthy aroma. Urban Farmer has been using the ramps in several different ways. From ramp butter, to ramp and asparagus side dishes and charred ramp garnishes paired with hearty steaks, our chefs have utilized these wild little treasures in many different and exciting ways. Ramps are often pickled, and probably taste fantastic in this fashion, but here in our kitchen they don’t last long enough to get them into a mason jar!
